Couscous and sweetness go surprisingly well together! This delicious breakfast treat is quite nutritious and filling!

Ingredients:

  • 1/3c. golden couscous (~62g)
  • 1c. water
  • 1/4c. 1% milk
  • 1tbsp. honey
  • 1/2tsp. cinnamon
  • 1/4tsp. pure almond extract
  • 1/2 an apple (~65g)
  • 4 medium strawberries (~70g)
  • 10g walnuts


Directions:

In a medium-size pot, bring water and milk to a boil with honey, cinnamon, and almond extract (the almond extract is absolutely critical to the flavour of this dish! Do not make without it!) Meanwhile, cut the apple half and strawberries into tiny pieces. After the water has been boiling for a few minutes (make sure it doesn’t overflow!); add in the couscous and stir as the mixture returns to a boil (~30sec).

Immediately take off heat, stir, and cover for approximately 4min. Combine all ingredients, stir, and cover for an additional 2min or until fruit has heated slightly and all water is absorbed into the couscous.

Garnish with two thin apple slices and a dusting of cinnamon, serve, and enjoy!

This filling meal is 446 calories (and could be a decent amount less without the walnuts, but they add such a yummy texture, extra protein and healthy fats!)
