Yum yum yum! This is what I was talking about yesterday when I made the bold claim that I had discovered love and heavenly delight. This is the recipe you have been waiting for (I couldn’t wait either; I had to prepare this dish again immediately).
Servings: 1, or 2 if used as a side dish

- 1/3c. golden couscous (~62g)
- 1 1/4c. water
- 10-15 spears of asparagus (~160g)
- 6 slices of extra lean capocollo (~37g)
- 2tbsp garlic, divided
- 1/16tsp crushed red peppers
- 1/16tsp salt, or to taste
- 1/16tsp pepper, or to taste
In a medium-size pot, bring water to a boil with 1tbsp garlic, salt, pepper, and crushed red peppers. Meanwhile, cut the asparagus into ~2cm-long pieces and boil/steam it in a frying pan with a little bit of water and the other 1tbsp of garlic.
Immediately take off heat, and cover. Return to your asparagus/capocollo pan and stir the contents until the couscous is ready (approx 4min). Combine all ingredients, stir, and serve hot to your pure delight!
