Yum yum yum! This is what I was talking about yesterday when I made the bold claim that I had discovered love and heavenly delight. This is the recipe you have been waiting for (I couldn’t wait either; I had to prepare this dish again immediately).

Servings: 1, or 2 if used as a side dish

  • 1/3c. golden couscous (~62g)
  • 1 1/4c. water
  • 10-15 spears of asparagus (~160g)
  • 6 slices of extra lean capocollo (~37g)
  • 2tbsp garlic, divided
  • 1/16tsp crushed red peppers
  • 1/16tsp salt, or to taste
  • 1/16tsp pepper, or to taste


In a medium-size pot, bring water to a boil with 1tbsp garlic, salt, pepper, and crushed red peppers. Meanwhile, cut the asparagus into ~2cm-long pieces and boil/steam it in a frying pan with a little bit of water and the other 1tbsp of garlic.

Cook the asparagus until it becomes bright green (this leaves it at the perfect balance between tender and crisp).

At this point, add in the sliced capcollo.

Your water should now have been at a boil for a few minutes; add in the couscous and stir as the mixture returns to a boil (~30sec).

Immediately take off heat, and cover. Return to your asparagus/capocollo pan and stir the contents until the couscous is ready (approx 4min). Combine all ingredients, stir, and serve hot to your pure delight!

All of this for only 334 calories!
